Healthy Orange & Almond Muffins

Use your left over orange juice pulp to make these healthy and delicious muffins.

Ingredient

  • 2 eggs
  • ¼ cup castor sugar
  • 160g orange pulp (from approx. 6 oranges)
  • 1 tsp. baking powder, sifted
  • 1 cup almond meal
  • 2 tbsp. Greek yoghurt
  • Shaved almonds, to decorate

Step 1.

Preheat oven to 180 degrees celcius. Grease a mun tin or line with muffin cases.

Step 2.

Beat the eggs and castor sugar together for 2 minutes or until light in colour. Add the orange pulp and beat until the pulp is well combined (approx. 30 seconds).

Step 3.

Add the sifted baking powder, almond meal and Greek yoghurt and fold through until just combined.

Step 4.

Spoon the mixture into 8 of the mun holes and sprinkle the shaved almonds over the top of each muffin.

Step 5.

Bake for 20 minutes until golden and cooked through. Stand for 5 minutes in the tin until turning onto a wire rack to cool completely.
