Christmas Cupcakes

Christmas is all about friends, family, and spending time together. We love to have the best Christmas desserts at these gatherings, and cupcakes are always a big hit!!

Ingredients

  • 24 pretzel sticks
  • ½ bag of white chocolate melts – about 6 ounces
  • green food colouring
  • sprinkles
  • vanilla cake mix – Use other flavours of cake mix such as yellow, red velvet cupcakes, or chocolate.
    Follow the ingredients on the back of the box include 1 cup of water, ½ cup vegetable oil, and 3 eggs.
  • 150g butter, softened
  • 2 cups Icing Sugar (300g)
  • 1-2 Tbsp hot water
  • 1/2 - 1 tsp of vanilla essence (or flavour of your choice, optional)

Instructions

  1. Christmas Trees.  Make Christmas trees by first lining a pan with baking paper and adding pretzel sticks. Melt white chocolate and then add few drops of green food colouring until desired colour.  Drizzle in a tree figure over pretzel sticks. Sprinkle with hundreds and thousands before the chocolate sets, then set aside.
  2. Preheat your convection microwave to 180 degrees.
  3. Cupcakes. Make cupcakes as directed on package, scoop into cupcake liners then bake in your convection microwave at 180degrees according to the box directions, and then let cool.
  4. Icing. To make the icing, beat the butter until smooth, pale and fluffy. Gradually add in the icing sugar, half a cup at a time.
    Add the vanilla essence (or other flavoured essence and/or colouring of your choice), with enough of the hot water to make a creamy mixture, beating between each addition until light and fluffy. 
  5. Pipe onto the cooled cupcakes and top with Christmas trees.
