Chickpea Feta Salad

This salad is ideal for entertaining or bringing along for a picnic since it can be prepared ahead of time.

With its fresh citrus flavours and simplicity, it will soon become a beloved dish! 


  • 3 cups canned chickpeas drained and rinsed
  • 1 cups roughly chopped parsley curly or flat leaf
  • ¾ cups feta cheese crumbled
  • ¼ cup extra virgin olive oil
  • 2 tablespoon fresh lemon juice
  • 2 cloves garlic crushed
  • 1 teaspoon honey
  • salt to taste


  1. Place chickpeas in a microwaveable bowl. Toss with half the Dressing.
  2. Microwave 1 1/2 minutes, stirring every 30 seconds, until warmed through.
  3. Combine all ingredients together, season with the salt to taste and set aside.
  4. Set aside for a minumum of 20 minutes to marinate (warm chickpeas = absorbs flavour). This salad can be made a few hours in advance.
