This salad is ideal for entertaining or bringing along for a picnic since it can be prepared ahead of time.

Ingredients
- 3 cups canned chickpeas drained and rinsed
- 1 cups roughly chopped parsley curly or flat leaf
- ¾ cups feta cheese crumbled
- ¼ cup extra virgin olive oil
- 2 tablespoon fresh lemon juice
- 2 cloves garlic crushed
- 1 teaspoon honey
- salt to taste
Instructions
- Place chickpeas in a microwaveable bowl. Toss with half the Dressing.
- Microwave 1 1/2 minutes, stirring every 30 seconds, until warmed through.
- Combine all ingredients together, season with the salt to taste and set aside.
- Set aside for a minumum of 20 minutes to marinate (warm chickpeas = absorbs flavour). This salad can be made a few hours in advance.
