Lime-Pickle Potato Salad

This easy and zesty Lime-Pickle potato salad makes for a cracking barbecue side dish.


  • 1kg cocktail potatoes, halved
  • 2 tbs lime pickle
  • 2 tsp extra virgin olive oil
  • 1 Lebanese cucumber, halved lengthways, sliced
  • 1/2 small red onion, diced
  • 60g baby spinach leaves
  • 100g Greek-style yoghurt
  • 1/4 cup toasted coconut flakes
  • 1 tsp dried chilli flakes


  1. Cut unpeeled potatoes in half. Place in a large microwave safe glass dish and cover with cold water. Cook, covered with a lid, for 23 minutes on HIGH (1200W).
  2. Add lime pickle and oil to a large bowl. Add drained potatoes and stir gently to coat.
  3. Mix yoghurt and 1 tbs water in a small bowl.
  4. Add cucumber, onion and spinach. Toss gently to combine. Serve salad dolloped with yoghurt and sprinkled with coconut and chilli.
