Microwave Orange & Soy Salmon Parcels

Indulge in the delightful flavours of a perfectly cooked Salmon Parcel, sweet and sticky, prepared effortlessly in your microwave. 

Accompanied by your choice of delectable sides, this culinary experience is sure to satisfy your taste buds.  Gently steam the fish in baking paper to guarantee a perfectly cooked piece of microwaved salmon. Enjoy this meal for two with sticky rice and pak choi.


Ingredients

  • 2 tbsp soy sauce
  • 1 red chilli, finely sliced (deseeded if you like)
  • 15g piece of ginger, peeled and cut into matchsticks
  • 2 spring onions, finely sliced
  • 1 orange, juiced
  • ½ tbsp honey
  • 2 skinless, boneless salmon fillets
  • 2 pak choi, quartered
  • Baking paper
  • Sticky rice, to serve (optional)

Instructions

  1. Combine the soy sauce, chilli, ginger, spring onions, orange juice and honey in a bowl. 
  2. Cut out two large squares from a sheet of baking paper, and put a salmon fillet and half the pak choi in the middle of each. 
  3. Bring the baking paper up over the fish, pinch and fold the corners together and transfer the parcels to a plate. Divide the sauce between the parcels, then fold the ends in to seal well.
  4. Microwave on high for 4-5 mins until the salmon is tender. Pour the sauce over the fish and serve alongside sticky rice, if you like.
