1 Minute Microwave Cake Pops

Cake pops are great for parties, and kids especially love them, but they’re usually made with leftover cake. This is the perfect way to them when you don’t have any leftover cake to work with. With this cake pop recipe, there’s no need to make a big cake, just to create leftovers!

Instead, you will quickly make some mug cakes in the microwave, and use those to make just the amount of cake pops you need. 

Makes 10-12 Cake Pops.

Ingredients

For the main batter
  • 60 g Butter
  • 60 g (5 tbsp) Sugar
  • 120 g (½ cup) Milk
  • 100 g (⅔ cup) All purpose flour
  • ¼ tsp Salt
  • 1 tsp Baking powder
To prepare the chocolate batter

Take half of the main batter mixture (above) and add:

  • 1⅓ tsp Cocoa powder
  • 3 tbsp Milk
For the Icing
  • 3/4 cup icing sugar
  • 1 Tbsp cocoa powder 
  • 25 g Butter, softened
  • 1 1/2 Tbsp hot water

    Instructions

    For the mug cakes
    1. In a microwave safe bowl melt the butter, add the sugar and room temperature milk and mix to combine.
    2. Add the flour, baking powder, and salt and mix to combine.
    3. Pour half of the batter (170 g) into 2 cups and microwave on HIGH for between 1 minute and 1 minute and 45 seconds. Alternatively, if you prefer, you can pour this half of the batter into a single mug, but timings will be different.
    4. To the other half of the batter add 1½ tbsp cocoa powder and 3 tbsp of milk. Mix to combine.
    For the icing
    1. Place icing sugar and cocoa powder in a medium bowl and stir to combine. Add softened butter and pour some of the hot water over the top.
    2. Mix together with a knife or spatula, adding more water as required to achieve a smooth, spreadable consistency.
    For the cake pops
    1. Transfer your mug cakes into a bowl and allow to cool for 10 minutes. 
    2. Add 1 - 2 tbsp of icing or Nutella, and roll your mixture into small cake balls. With this recipe you should be able to make 10 - 12 cake pops, depending how small or big you make them.
    3. To ensure the cake ball stays secure on the stick, dip each stick in the melted chocolate and then stick in the center of the cake ball.
    4. Freeze for 10 minutes, then thin out your chocolate with 1 tbsp of coconut oil (if desired) and dip each cake pop in this mixture. Add sprinkles and allow to dry.

    Disclaimer: Every microwave is different. Cooking time can vary. Do not over cook your mug cakes. If you want to make a bigger batch, you can double this recipe and cook your cake in 1 larger microwavable container. Adjust timing.
