Microwave Apple Cake

Whip up a speedy microwave spicy apple cake to satisfy your sweet tooth or impress your guests at your next dinner party!

Ingredients

  • 1 cup Raw Sugar
  • 2 eggs
  • ½ cup oil
  • 1 tsp vanilla essence
  • 2 apples cored and grated, or finely chopped
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp mixed spice

Icing

  • 50g butter
  • grated rind and juice of 1 lemon
  • 1 cup Chelsea Icing Sugar

Instructions

  1. Beat together the raw sugar and eggs in a food processor or large bowl. Add the oil and vanilla essence.
  2. Add grated apple, flour, baking powder, baking soda and mixed spice. Spoon into a non-stick sprayed and paper-lined 5 cup (1 litre) microwave-proof, ring mould.
  3. Cook on medium-high power for 8 to 10 mins. Cool on a wire rack and serve with lemon icing or a dusting of icing sugar.
  4. Melt the butter and add the lemon juice, grated rind and icing sugar. Mix until smooth, adding a little extra icing sugar until you have a creamy spreading consistency.
  5. Spread over the cake when it is cool.
