Quick and Easy Egg Sandwich

Looking for a quick and satisfying meal you can whip up at work or enjoy any time of day? This toasted English muffin sandwich is the perfect solution.

Layered with fluffy eggs, crispy bacon, melted cheese, and creamy avocado, it’s hearty, delicious, and ready in minutes. Plus, it’s freezer-friendly and easy to customise with your favourite fillings—making it just as great for busy mornings as it is for a simple, fuss-free lunch at the office.


Ingredients

  • 1 English muffin, split and toasted
  •  1 large egg
  •  1 tsp butter or splash of milk (for the egg)
  •  1–2 slices cooked bacon (or ham/salmon for an easy swap)
  •  1 slice cheese (cheddar, tasty, or your favourite)
  •  ½ avocado, mashed or sliced
  •  Salt and pepper, to taste

 (Optional: tomato slices, baby spinach, hot sauce, or fresh herbs)


Instructions

  1. Place the split English muffin in the toaster, and toast until lightly golden.
  2. In a microwave-safe mug or bowl, whisk the egg with a little butter or milk, plus salt and pepper.  Microwave on MEDIUM power for 45 seconds, stir, then cook in 15-second bursts until the egg is set but still soft.
  3. Place a slice of cheese on one half of the toasted muffin and microwave for 20–30 seconds until the cheese just melts.
  4. Layer the scrambled egg on top of the melted cheese and add cooked bacon, then top with mashed or sliced avocado.
  5. Finish with the second muffin half, and if you’d like the whole sandwich hot, microwave assembled sandwich for 15–20 seconds.
  6. Serve right away for a quick, filling, and delicious office-friendly meal.
