Beef and Cheese Enchiladas

These microwave enchiladas are bound to disappear off the plate fast!  Perfect for a speedy weeknight meal for the kids!

Cooking time: 8 mins

Serves: 3

Ingredients

  • 230g minced beef or pork
  • 2 tablespoons chopped onion
  • 2 cups grated cheese, divided
  • 1 can enchilada sauce, divided
  • 1 tablespoon chopped green chilies
  • 6 corn tortillas, warmed
  • Shredded lettuce and sour cream, optional

Instructions

  1. Break up beef into a microwave-safe dish and add onion. 
  2. Microwave covered on HIGH until beef is no longer pink, 2-3 minutes
  3. Drain, and stir in 1 cup cheese, 1/4 cup enchilada sauce and green chilies.
  4. Place about 1/2 cup beef mixture off center on each tortilla. Roll up and place in a greased microwave-safe dish, tortilla seam side down. 
  5. Top with remaining enchilada sauce.
  6. Microwave covered on HIGH until heated through, 5-6 minutes.
  7. Sprinkle with remaining cheese and cook, uncovered, until cheese is melted, 1-2 minutes longer. 
  8. If desired, serve with lettuce and sour cream.
