Kumara Fudge Brownie

Want a twist on the traditional chocolate brownie?  Then you are in for a treat with this twist, using sweet potato to create a delicious fudge brownie!

This recipe is from Sharp Australia who used the R890EST (1200W) microwave to cook the sweet potato. 

Ingredients

  • 2 medium sweet potatoes
  • 2 free range eggs
  • 2 Tablespoons coconut oil, melted in the microwave
  • 1/2 cup almond meal
  • 1/2 cup cocoa powder
  • 1/2 cup coconut sugar
  • 1/2 cup dark chocolate chips
  • 1 teaspoon baking powder

Instructions

  1. Clean and dry sweet potatoes. Pierce the skins several times with a fork, this ensures that the sweet potatoes don’t erupt while cooking. Place the sweet potatoes directly onto the turntable and cook using the ‘Sweet Potato Auto Menu’ 14 minutes at 1200W). Turn the sweet potatoes over half way through cooking.
  2. Remove the sweet potatoes from the oven and allow to cool before removing the skin. Mash the sweet potato in a bowl.

  3. Preheat oven to 210°C.
  4. To the sweet potato add the eggs and coconut oil. Mix until well combined.
  5. Then add the almond meal, cocoa powder, coconut sugar, dark chocolate chips and baking powder, combine.
  6. Transfer mixture into a baking dish lined with baking paper. Bake for 40 minutes at 210°C.

Allow to cool before serving. Store in the refrigerator.
