Winning recipe - how to make the perfect microwave lemon mug cake

In the lead up to Father’s Day, Sharp New Zealand has been scouring the internet for your best microwave meal recipes to spoil dad with on Sunday 5th September, we encouraged our followers to submit microwave meal ideas that would not only be delicious and family friendly, but easy to make with your microwave oven.

Our Father’s Day cooking competition ran for just over a week through Facebook and Instagram. And we think we have found the perfect submission that is both delightfully easy to make, but mouth watering and eye catching too!

And the winner is…

Lemon Mug Cake by Michelle @Seeking_different

Michelle’s masterpiece in a mug even comes complete with a happy smiley face and looks good enough to eat. To recreate it and treat your family or friends to a lovely lockdown sweet treat, follow this simple recipe:

A delicious, easy to create lemon mug cake created by Michelle @Seeking_different


4 Tablespoons of all-purpose flour

2 tablespoons of sugar

1 egg

¼ tablespoon of baking powder

⅛ tablespoon of salt

1 tablespoon of lemon juice

¼ cup milk (feel free to use a dairy free version!)

2 tablespoon vegetable oil

1 table spoon vanilla extract

Lemon Zest

And for the glaze:

2 table spoons icing sugar

½ teaspoon lemon juice

Combine wet and dry ingredients in a greased mug, and microwave for between 2-3 minutes. To test the doneness of your cake, you can stick a cocktail stick in it and if it comes out clean, it’s done. There you have it. The perfect microwave lemon mug cake!
